Frst class demo this semester - How do you cook greens that look good enough that your friends will be excited to eat them. Wrap them in #filopastry! 3 bunches of kale, 3 bunches of swiss chard. Clean, boil, drain water which removes bitterness, chop and refry with garlic, salt and pepper. I also add lemon juice to taste. Roll in filo pastry, glaze with melted butter on top, and put in 375oF oven. Bake 40 min until golden brown. It took 1 hour 13 min, (yes I timed myself,) from washing to putting in the oven, including mincing garlic. We have switched to low-fat foods, but the shift didn't make us healthier, probably because we cut have cut down on both healthy fats as well as harmful ones. Good fats include monounsaturated and polyunsaturated fats. Bad ones include industrial-made trans fats. Saturated fats fall somewhere in the middle. Good fats come mainly from vegetables, nuts, seeds, and fish. Sources of monounsaturated fats are olive oil, peanut oil, canola oil, avocados, and most nuts, as well as high-oleic safflower and sunflower oils. Good sources of omega-3 fatty acids include fatty fish such as salmon, mackerel, and sardines, flaxseeds, walnuts, canola oil, and unhydrogenated soybean oil. Fats, just like carbs and protein have some essential role in our body. Some of these are: 1) It helps you absorb fat soluble vitamins and minerals. 2) They are very important for the synthesis of some hormones. 3) Omega-3 fatty acids may help prevent and even treat heart disease and stroke. 4) PUFA (polyunsaturated fatty acid) in addition to reducing blood pressure, raising HDL (good cholesterol), and lowering triglycerides, may help prevent lethal heart rhythms from arising. 5) MUFA (mono unsaturated fatty acid) reduces LDL (bad cholesterol) P.S- Mixing 2-3 good fats or rotating between different types of oil is very beneficial as then you can acquire the benefits of them all. Look! no Noodles:) :( ! For those of you refraining from graining ...wheat/rice/quinoa, etc.... It’s sometimes hard to get a suitable veggie substitute. I like zoodles/butternut squash and carrot doodles, but sometimes I want something different with more Vit K, vit C and digestive aid properties... 🥬... Add any protein you like (ground pork/shrimp or chicken) or other savory and meaty veggies like mushrooms. I used one of those flavor bombs I talked about a few posts back, xtra ginger... Slice cabbage fettuccine width, add to hot pan for about 1-2 minutes of tossing. I like to keep crunch on my veggies, so toss all quickly with the flavor bomb in hot pan. Add other herbs, sesame oil/tamari or aminos/seeds. Whatever you like or diet allows. Plate quickly so you don’t keep cooking in the hot pan. #vegan #ornot #vitamink #glucosinolates #eatrealfood
