Soft scrambled eggs with spinach + grass fed cheddar & crispy fingerling potatoes with @primalkitchenfoods ketchup for dipping 💯 HOW TO: Soft scrambled eggs- in a bowl combine two eggs with a splash of almond milk and whisk to combine. In a small skillet, add a little ghee (or any cooking fat you prefer) and heat on medium. Add a handful of spinach and season with salt. Once the spinach begins to wilt, add your egg mixture and top with a slice of cheddar. I like to use @rumianocheese since their cheese comes from grass fed cows ❤️ Turn the heat down to medium low and use a spatula to mix everything together. Continuously move the eggs around the skillet till whites are just set. I’ve found this works better in a non stick skillet compared to a cast iron skillet since a cast iron gets really hot. Potatoes- heat oven to 500 F and place a baking sheet inside to heat. This helps the skins of the potatoes get crispy while the inside is soft. Drizzle potatoes with avocado oil and season with salt and nutritional yeast. Toss to combine. Spray baking sheet with oil and place potatoes in a single layer. I can never decide so I just make both 😂 Thick cut sourdough from @wholefoods, smashed avo, ebtb seasoning, red pepper flakes and eggs two ways...you just can’t go wrong 🤪 Sharing egg tutorials below 🤙🏻👇🏻 . . Soft boiled tutorial: Bring a small pot of water to a boil, add egg and boil for exactly 7 minutes. Remove from boiling water and add to ice bath for five minutes and then peel. . . Crispy egg tutorial: Bring pan to medium high heat, add 2 tsp of ghee or olive oil, and crack egg in and fry for about 1 minute until edges are crispy. Turn heat to medium low and allow egg to finish cooking for about 3 more minutes.

Los garbanzos tienen un buen aporte proteico y de fibra, además de sus múltiples vitaminas y minerales ◽️ y además de todo eso, le estamos agregando otro plus, la acelga y cebolla, vegetales con buen aporte de agua, fibra, vitaminas y minerales. • Listo, NO tenes razón para NO hacerlas 🙌 Salen 8 aprox 🙌: > 1 taza y 1/2 de quinoa cocida [yo consumo la de @aikenfoods , la lavo y la hiervo unos 10 minutos] > 2 huevos > 5 cdas de harina de garbanzos > 1/2 cebolla picada > 1/2 taza de espinaca cocida, picada y bien escurrida > condimentos a gusto [yo use sal, oregano, pimienta y nuez moscada] > avena c/n [para rebozar, pero es opcional] . . Para hacerlos mezclá un huevo grande o dos, si son muy chicos, con cuatro cucharadas panzonas de harina de arroz (también pueden hacerse una trigo, pero dejan de ser sin gluten), media taza de leche, media cucharadita de polvo para hornear y un poquito de sal. 🍎 🍑 🍇 Really trying hard to challenge these food rules lately, so I’m experimenting with different fruit on top of the porridge I have for supper. ⁣🥝🍒🍌🍐 ⁣ I usually stick to either fresh apricots or peaches on my porridge, as they feel safe and I know I like them. However, when the seasons change, that means the fruit available also changes and my anorexia hates it! It means I have to choose something else. It seems so silly to be scared of fruit, something so natural and healthy. Yet I get the thoughts of ‘oh, that might be sweeter, which means it contain more sugar’ or ‘that has X amount of calories more.’ Then the rational part of my brain is saying ‘It’s a piece of bloody fruit!!’ I actually love fruit, but always sticking to certain ones is fuelled mainly by my anorexia. ⁣ So, I tried fresh figs last night, which I wasn’t too keen on. The anorexia had me thinking that it was just a waste of calories, as I hadn’t enjoyed them. I am glad I tried it though, as I have wanted to for a couple of years, but always talked myself out of it. At least now I have done it and know that they’re not at the top of my favourite fruit list! I’m going to try these yellow plums tonight, which I picked up earlier. I like the ordinary red/purple kind, so quite interested to give them a go! ⁣ ⁣ Varying my diet and allowing myself to be flexible with my food choices is a much healthier way to live. I’m not always going to be able to buy the exact same product, the exact same brand. As my life changes for the better and I’m out doing more things, going to new places, I will be in situations where I may need to go in the only shop available. Getting used to change, no matter how hard it may seem right now, is one of my big aims in recovery. ⁣

NOODLES CON VERDURAS. ~ Sí, esto no merecía estar solo en mi historia (?) Tenía ganas de comida asiática desde hacía tiempo y pues se me antojó los noodles de arroz de mercadona. No es dármelas y tal pero me quedó demasiado rico ewe (mesorprendíporellosi) 😂 Pero estoy proud to myself 😌😌. Es vegano, (obvio 👏🏻🙄), seguramente me dé por subir más fotitos de las comidas más así que me vayan quedando (y de mi avena pls, VIVA LA AVENA 🥣) Al tema que me lío 🤣 Lo que hice fue... Picar la verdura (cebolla morada, pimiento rojo, zanahoria rayada y brócoli) [AMOELBROCOLISEÑORES]. Cocí los fideos como indicaba el paquetito y luego lo pasé todo al sartén con una cucharadita de aceite de oliva (muy poquita) + 2 de agua. Ya por último le agregué piña (también soy fan de la piña, si 🍍) y la salsa era pues 3 cucharadas de soja, una de vinagre de manzana y rebajada con una de agua. Al final unas semillas de sésamo. T A R T A M A S A P A P A ! Otro de los platos que les prepare ayer a mis amigas: tarta con base de papa y relleno de espinaca. Gran opcion para variar de la tipica tarta, que dicen?? Y ademas suuuper facil. Esto es asi: • Base > 3 papas chicas @mediocampo.organico > 1 cdta aceite de coco > sal y pimienta 🔛 Lava bien las papas, yo les deje la casacara. Corta rodajas finas (podes usar mandolina) y en un bowl mezclalas con el aceite y condimentos. Acomoda en un molde para tarta, la idea es que se apoyen entre si y que hagas dos o tres capas asi el relleno queda bien contenido. Lleva al horno 15 a 20 mins para una precoccion. • Relleno > 4 tazas espinaca picada > 1 cebolla (en @biomac conseguis ya picada y congelada) > 2 huevos @mediocampo.alimentos > 1 taza queso crema > 1 cdta aceite de coco > 1/2 diente de ajo > sal y pimienta 🔛 Pica la cebolla y el ajo y saltealos con el aceite en una sarten, si es necesario agrega agua para que siga la coccion. Procesa todos los ingredientes y volca sobre la papa precocida. Por arriba semillas (o queso rallado) y termina de cocinar unos 20 mins mas. Otra opcion de tarta con #masaquenoseamasa para sumar a la lista! Slept in this morning spooning Mav 🐶, did my regular ritual of warm lemon water, 10 min meditation 🧘🏻‍♀️, and this cozy matcha latte 🥰 Lately, my ‘meal prep’ has consisted of making a batch of green smoothie + iced matcha latte to make my mornings a lil easier (and reduce blending things in the morning), but I’m just about ready to switch back to hot matcha for good 💚 . dEATS: cashew mylk (1/4 cup cashew : 1 cup almost boiling filtered water) • 1 tsp @myencha matcha latte grade • 1 tsp @drbronner coconut oil • 1/2 tsp @thrivemarket raw honey • 1/2 tsp @simplyorganicfoods cinnamon • 1/2 tsp @terrasoul reishi powder (boosts immune, 👋🏼 seasonal allergies). . But I welcome fally foods with open arms, I could live off of only soups with no real complaints. 🤷🏼‍♀️ Easy veggo packed lunchin Bowl: quinoa noods, steamed broccolini, steamed organic edamame beanz + a lotta fresh basil pesto (I use nutritional yeast instead of cheese for mine and usually hemp seeds for the nuts.. I find if you have enough herbs, proper olive oil, fresh garlic and lemon - pesto is a hit regardless of what else goes into the mix)

happy monday! here’s a lil something that i cooked up last night- it’s gonna be our lunch today. we tried meal prepping for the first time this weekend. 😮 even though we didn’t meal prep every single meal, getting some things cooked for the week was really stress relieving. 😌 . i made @traderjoes falafels using their falafel mix, and they turned out amazing! it’s super simple to make: all you have to do is add water to the mix and bake them! i also made some @bobsredmill quinoa, and i cooked onions, @organicgirl spinach, garbanzo beans, and corn together. 🍴finished the dish off with sesame seeds and onion powder!

No - it's not true- but in the past the eggplant was thought to be an aphrodisiac- probably because of its elongated shape . 'Fricando' is a vegetable stew from Romagna that is often served with polenta or a warm 'piadina' or 'pida' - a flat bread made with wheat flour or cornmeal, olive oil and salt that has been made in Romagna since the Middle Ages. Fricando has many variations. It is usually made with fried aubergines and potatoes simmered in an onion and tomato sauce, but courgettes and sweet peppers are possible additions. Trim the ends of 2 medium aubergines (eggplant) and cut into 1cm (1/2 in) dice. Heat 3 tablespoons extra virgin olive oil in a large frying pan and add the aubergines. Cover and cook over a gentle heat until they are tender and starting to turn golden, stirring from time to time so they cook evenly. Remove from the pan and set aside. Meanwhile cook 250g (1/2 lb) baby new potatoes in lightly salted boiling water for 10minutes or until they are almost tender. Drain, then cut in half or quarters. Heat 2 tablespoons extra virgin olive oil in the same frying pan and add the potatoes. Cook over a moderate heat until they start to turn golden . Heat 1 tablespoon extra virgin olive oil in a separate pan and add 1 medium finely chopped onion. Cook over a moderate heat until it is softened. Add 250g (1 cup) peeled and chopped plum tomatoes and continue to cook until the sauce is thickened. Add the aubergines and potatoes, 1 tablespoon torn basil leaves and season with salt and black pepper. Simmer for a further 5 minutes to blend the flavours. Serve hot.
