This past week has been rainy and cold, so I’ve been craving cozy meals all week long 😬 Last night I finally had the chance to pick up some ingredients for the coziest Friday night dinner, and and made this vegan chili 🙌🏻 I’ve made vegan chili before but I always found it was soupier than I wanted, so I did some research and saw a few people recommend adding quinoa for a thicker texture 😄 I added quinoa and I can’t believe I didn’t do this sooner 🤯 It seriously turned out SO good, and the leftovers were even better the second day 🤤 I topped mine with avocado, @tofuttibrands sour cream, and more jalapeño 🔥 Had some for lunch today and I am just really thankful I have three more bowls of it 😂 . Ingredients: 1 red bell pepper, 1 jalapeño pepper, 1 onion, 3 celery stalks, 7 cloves garlic, 1 package (200 grams) mushrooms, 1 tbsp oil (olive, avocado, whatever you have), 1 can kidney beans, 1 can black beans, 1 can (1.5 cups) corn, 1 can (28 oz) diced tomatoes, 2 tbsp tomato paste, 1 cup dry quinoa, 2 cups vegetable broth, 1/4 cup chili powder, 2 tbsp cumin, 2 tsp smoked paprika, 1/4 tsp salt (more to taste). . Sauté onion in a Dutch oven or large pot in oil for 1-2 mins on medium heat, and then add celery, red pepper, jalapeño, mushroom, and sauté for 3-4 mins until vegetables start to soften. Add garlic and sauté for another minute. Add spices and cook for another 1-2 minutes. Add diced tomatoes, beans, corn, tomato paste, quinoa, and vegetable broth, mix, bring to a boil, and then simmer covered for 1 hour, stirring every 20 minutes or so. This makes 4-6 servings depending on how big your bowls are 🤗 . Happy Saturday!! Ben and I are having date night tonight 🥰 We’re heading out to see Hustlers tonight which looks like it’s a pretty good movie! We’re also planning on going to the cineplex VIP theatre, which if you’ve never been to you are missing out on the best movie experience 😂 It’s 19+ so there are no kids, and they serve alcohol so you can order a bottle of wine and drink wine while you see a movie in theatres, and also the seats are super comfy and huge 😇 I’m so excited 😬 Hope you’re all having a great weekend so far!! ❤️❤️

Health food on the go 🏃🏼‍♀️ I feel like grocery store salad bars that are not at Whole Foods or Wegmans are just... not... good. At all lol. So!! If you’re like me and always running around and you’re looking for a fast healthy meal, I still like going to whatever grocery store is closest to me, but just going to the salad bar for some mixed greens and select veggies. Then I like adding avocado and canned salmon or tuna and it’s just the easiest thing!!! So take a peak at this tuna I found... what I look for is ❌no canola oil and ✅extra virgin olive oil . Canola oil is highly inflammatory and companies sneak it into everything... watch out for it. I skipped the weird mystery meat that was ready at the salad bar because... really, what is that? Ham?? Idk. Anyways, this tuna was really good, and the salad all together was great! All prepped together in my car as I was driving place to place yesterday 😂 and no I wasn’t driving and doing this. I have been craving the veggies lately. I don’t eat many of them often - but not because I don’t like to eat them. ⁣ ⁣ Often my body feels bloated and too many veggies cause me gastric distress. So I often keep it simple with just high quality animal proteins.⁣ ⁣ My body must have been telling me something because, I woke up feeling well rested and energized. It’s basically fall 🍁 Focused a little less on foods and more on the “gathering in” process that starts around the fall equinox: cleaning, harvest (decor, in an urban setting), and preparing to be cozied-up at home. C’est ce qui te permet de te sentir vivante, d’avoir de l’énergie pour bouger et tout simplement d’être bien dans ton corps. C’est ce qui te fera sentir «clean», en forme et comme si tu te donnes le meilleur des outils pour réussir. C’est ce qui te permet de passer au travers de ta journée en te sentant fucking hot. 🔥 ⠀⠀ Oui, l’entraînement te permet aussi de te sentir forte et confiante, mais ça ne sera jamais aussi puissant si tu manges comme d’la marde! 💩 ⠀⠀ Donc, sur ce, les habitudes alimentaires qui m’ont transformé le plus et qui se sont manifestés pour rester sont de loin des habitudes véganes. D’ailleurs, c’est ce qui m’a permis de perdre plus de 45lbs sans nécessairement y mettre d’effort et sans bouger plus. ✌🏼 ⠀⠀ Il est là le pouvoir de ce qu’on met dans notre corps. this little just-picked radicchio at the market this morning. Vital Proteins Wild Rice Soup ‍ Yields 6-8 Wild Rice Soup servings ‍ Ingredients: 1 white onion, chopped 2 carrots, peeled and chopped 2 celery stalks, chopped 2 sweet potatoes, peeled and chopped 2 C mushrooms, chopped 1 C kale, chopped 1 T minced garlic 1½ C wild rice 1 can coconut milk 4 C water 4 scoops Vital Proteins Chicken Bone Broth Collagen 2 T olive oil 2 t onion salt 2 T rosemary Salt and pepper for flavor ‍ Directions: 1. Heat up half of the olive oil in a large pot over medium heat. Once oil is heated, add in the onions and celery and cook for 5 minutes or until soft. Once cooked, add in the garlic, carrots, sweet potatoes, and mushroom until soft. 2. Once the vegetables are cooked through, add in rosemary, onion salt and the other half of the oil. Mix together until evenly combined. 3. Add in the Bone Broth Collagen to the water and mix separately. 4. Next, add in the coconut milk and bone broth and bring to a boil. Once boiled, add in the wild rice and chopped kale and reduce the heat. 5. Cook for about 40 minutes or until the rice is completely cooked. Tropical Tacos, took me away.🌴 💕 I was bummed I was missing the big vegan taco 🌮 fest in LA, so I had to find me some tacos. I found the best tacos I have ever had in my entire life and they are RAW. @saludrawfood 😍🥰 3 Tacos filled with walnut meat, cabbage, cashew sour cream, tropical mango 🥭 salsa and spicy pepitas for $12.50 and it was worth every penny!🤤😋 The spicy pepitas basically acted like a super dope salsa or hot sauce to add just the right kick 🌶️🔥 to still keep this light, fresh and filling! 💕 Followed up the tacos by trying a raw strawberry vanilla cheesecake.🍓 The crust was filled with different types of nuts and the cheesecake was super creamy and thick. It’s only been a couple of days since I received my @brysonfarms vegetable basket, but I’ve already come to realize how much I’d fallen into the habit of eating the same (fortunately quite varied) rotation of vegetables from week to week. Not only was I eating the same 12-15 vegetables much of the time, I was often preparing them the same way. 🌿 🧺 🌿 Now that my fridge is full of produce that I had barely even heard of (e.g. tomatillos, mangels, etc.), my inner culinary creative is feeling inspired to come out and play.
