I am holding on to the tastes of summer as the Aspen leaves in my yard are turning yellow. Heres a receipe my sister and I made a while back that I just forgot to post for some salmon with roasted raspberries⬇️ . Ingredients: 3 (6 oz) wild caught salmon fillets 2 cloves of pressed garlic 1/2 t fine sea salt 1 T minced fresh ginger 1 pt raspberries 1 t balsamic vinegar . Process: 1. Preheat the oven to 400° and lined a rimmed baking sheet with parchment paper 2. Rub the tops of the salmon fillets with garlic and salt, sprinkle with the minced ginger and put fillets on the baking sheet 3. Toss the raspberries (delicately so you dont smush them) with the balsamic vinegar and place around the salmon in the baking sheet 4. Bake for 12 to 13 minutes. Gently spoon the roasted raspberries on top of the fillets and serve immediately . The salad is just a simple kale salad with sliced peaches and an aip honey balsamic dressing. This weekend, my university put on its annual family weekend! 👨‍👩‍👧 I have nothing but gratitude in my heart today after having gotten to spend the last two days with my parents 💖 . Here are this morning’s 4 ingredient cinnamon oats that you can make in the microwave! 😱 Topped with the classics: banana, strawberries, and almond butter 😋 . I hope you have a magnificent day and start to the week and that you get to try these oats sometime soon! 🤗 . RECIPE: 1/4 cup gf rolled oats 1/4 tsp cinnamon 1/2 cup almondmilk 1 serving vanilla plant protein . Combine oats, cinnamon, and almondmilk in a microwave-safe bowl. Microwave on high for a minute and a half to two minutes or until the oats are cooked, but still fairly liquidy. Stir in protein powder and top with your favorites! Easy as pie! 😄

Peep my breakfasts over the last week. 🥙🥓🍳 • There’s no rule that says you have to eat 5-6 tiny meals a day. In fact, that actually doesn’t work for a shit ton of people, because it means they never experience: • -SATIETY: feeling full -BALANCED MEALS: hard to do when you’re only eating 200-300 calories at a time • The 5-6 small meals a day also means people are eating in a hurry, often standing up, not actually chewing their food, etc. This means that people are actually not eating MEALS. It means they are snacking all day long. Bites here & there add up; it’s one of the biggest culprits of stagnant progress. • So - it’s one of the first things I encourage of any nutrition client: dedicate time in your day for 2-3 REAL FOOD, sit down meals. You’ll experience fullness, relish your meals because you’re actually chewing & not multi-tasking, & have a much easier time hitting fiber, vegetable + protein goals. • A meal high in volume (vegetables + fiber) & protein/fat, will leave you feeling content, regulate blood sugar for hours & supply you with a steady stream of energy to go about your day. • My typical day of eating looks like this: • 9:00am - 2 cups of coffee with cream + collagen 11:30am - Meal 1 3:30pm - Snack 7:30pm - Meal 2 • On days I’m training, I might have a small, 100 calorie post-workout carb-dense snack to tide me over until I sit down for dinner, like a small banana, a chia bar, etc. • This means my sit-down meals are BIG. My plate is typically overflowing & I’m full for hours, avoiding any unnecessary need to snack on empty/nutrient void calories throughout the day. • My meals ALWAYS include a healthy dose of fat (20-30g easy), protein and lots + lots of vegetables. • Notice how I don’t call my first meal of the day breakfast. I don’t like being pigeon holed into the standard American diet of waffles, syrup or cereal that Breakfast usually consists of. It’s simply Meal 1: & it’s full of foods I’d eat at dinner, from tomatoes, to pork chops, to chicken sausages, to roasted onions and bell peppers. • What are some “diet rules” you’ve thought to be true? #cookingwithmommy I almost killed myself/us this morning 😔😠🤦🏾‍♀️. I remember a time when #glutenfree primarily meant WHEAT 🌾 AND GLUTEN FREE 👀. For the most part I still read labels when I grocery shop but brands that I buy on a regular basis, I get or have gotten a little laxed on. More recently I can't eat any from #schär except for the bread and crackers. EVERYTHING has milk in it and now there's WHEAT! This isn't going to work 😣. If I didn't know any better I'd think they were trying to kill me! Ok, joking... But still I'm glad I gave the bag a once over before I opened it. Now - let's see if I can get my money 💵 back! It’s official - dairy and I no longer mesh. Not even the super fancy, organic, grass fed goats products. :( My skin inflames, my joints ache, and I get this very large Buddha belly.... quite irritating considering all the abs I do these days! It’s a shame but I’m not letting it get me down! Instead of yogurt this morning I made me a fabulous chia cereal of sorts. 1/2 cup chia seeds and 3 tbsp cacao nibs in 1.5 cups full fat coconut milk. Add @greatlakesgelatin Collagen Powder and @apex_energetics Nourish Greens for flavor. Soak over night. Serve with apple, walnuts, cinnamon and an extra large splash of almond milk to make a fabulous, dairy-free yogurt(ish) alternative. Toppings were blistered baby tomatoes, cayenne and serrano peppers, avocado, @salvaterrasgardens parsley, and garlic @falksaltusa!

SUNDAY! Perfect morning for some banana bread slathered with nut butter. Currently eating this and it’s 6am. Guyyyys this is the BEST banana bread. Gluten and dairy-free. I might be biased, I usually am when I make things, but this stuff is amazing. I used @erinliveswhole amazing recipe to guide most of this, but made a few changes to alter the nutrients and digestibility (just personal preferences and optimal for post-workout!). LEMON AND BLUEBERRY CAKE • This was my first time making a lemon and blueberry cake and it turned out very tasty. I’ll post the link of the recipe I used but I changed the icing and made a standard lemon buttercream instead of a lemon cream cheese icing. The middle has a layer of lemon buttercream and a layer of blueberry compote which was very very runny and turned out to be very messy!! In future I would recommend using non frozen blueberries as this caused the compote to be extremely runny and not set!
