Another week, another new recipe tried and tested! I’m loving this new ritual that I have guys, it’s so fun searching around for a recipe, buying the ingredients and then finally cooking it. Don’t get me wrong, I loooove my own recipes, but sometimes it’s very nice to branch out and try something new and exciting to add to the repetoire. This week I tried the Mushroom & Pea Masala from @aichabouhlou with cous cous and it was absolutely divine! And so quick and easy 🙌🏻 I whipped this up after a long day at work and it made enough to bring to lunch the next day as well. Have you seen this type of spring roll before? Inspired by a dish I had in California, this crunchy netted roll paired with crisp greens & aromatic herbs is a dish for you who likes texture and flavors.🥰 ⁣ Recipe (yields 8-10 rolls)⁣ Ingredients:⁣ ~ 1 pack of Vietnamese roll wrapper 'bánh tráng rế' (found at frozen section) - sub with normal spring roll wrapper⁣ ~ 3 cups shredded cabbage⁣ ~ 1/2 cup shredded purple cabbage⁣ ~ 1/4 cup shredded carrots⁣ ~ 8-10 caps shiitake mushrooms, soaked until soft & sliced (omit or sub with tofu👌🏻)⁣ ~ 3 cloves garlic - minced⁣ ~ 2- 3 teaspoons soy sauce/tamari⁣ ~ 1/2 teaspoon toasted sesame oil⁣ ~ oil for frying⁣ ⁣ 🍃Garnishes: Green lettuce, mint, Thai basil⁣ 🍃Dipping sauce: Mix sweet and sour sauce (used @maeploy_kitchen )with a squeeze of lime juice⁣ ⁣ ✔️Thaw wrapper to room temperature or prepare wrapper of your choice based on package instructions.⁣ ✔️In a heated non-stick pan with drizzle of oil, sauté garlic until fragrant, then add mushrooms & cook for 1 minute by stirring continuously. ✔️Add in cabbage, season with soy sauce, sesame oil & cook until cabbage is fully cooked through. #repost via @jessica_prescott_ Last nights nachos 🤤 To me, perfect nachos are when the toppings are plentiful enough to make the corn chips semi-soggy, so you can fold a chip onto itself with lots of fillings inside, kinda like a mini taco. These were exactly that, perfection in every way. A vague recipe: @feel_good_foods salted corn chips, my signature black beans, @olianafoods cheddar cheese and then into the oven and forgotten about until I thought I smelt the chips burning 😅 out of the oven and topped with homemade salsa (recipe in my first book but it’s basically just corn, red onion, tomato, capsicum, coriander and heaps of lime), cashew cream and guac. Happy Friday! 🤗 Hoping you all are well. Tonight we decided to make some pizzas our way. I made some sweet potato crusts, one for me and one for Greg. We both went our own way when it came to topping it. I loaded it up with some sauce, tofu and veggies. I like being able to make my own personal pan because I always tend to want something different from everyone else. I always love all the veggies, so I just load up with reckless abandon. But you do you and go for what makes your heart content.💃🏽 . I like adding sweet potato to my dough because I love the taste of it. And it happens to add a little extra beta carotene, and other antioxidants, so why not. 👀 Pretty easy to do. Just 1 cup mashed sweet potato mixed with 1 cup whole wheat pastry flour or regular flour and 1 tsp baking powder. If dough is too dry add a little water to moisten. If dough is wet/sticky, add more flour until proper dough is formed. Roll it out to flatten, then bake for 6-7 minutes in the oven at 350F and then load up with veggies and pop back in the oven to cook another 10 minutes. You can also treat this like a flatbread and cook dough completely before topping (cook in oven for about 15 minutes). 👏🏽 . Just in case, there is some seasoned tofu, blistered tomatoes, zucchini, mushrooms and thinly sliced Brussels sprouts (I literally told you I loaded it with the veggies, so don’t judge me). 👑

FINDING NEW WAYS TO GIVE BACK!!!!!! Anyone who knows me, knows how much I love animals. You can find me crying on the daily watching animals video both uplifting and devastating. After going vegan like 6 years ago, my love for animals has become immense and while this year my goal is get more involved in the activism side, i’ve decided that I would also like to allocate more funds for the cause. As some of you may or may not know, a few years ago I decided I wanted to take my hobby of photography to the next level and go back to school to deepen my knowledge and also start assisting working professionals so I could be improving on the daily. If you want to see more of my recent work you can see it @jessattelberger. . I have decided for the time being that in lieu of receiving direct payment for my photography, I have been asking clients to donate the money to some of favorite organizations. Especially since my full time job of being a voice over actor keeps is keeping me afloat. And I’m so excited because today I was able to have $750 go to @animalhopeandwellness. I will be rotating through many of the rescues and organizations that I see going above and beyond on the daily. It feels so good to give back. . This photo was taken at @kindredspiritscarefarm. Burrito, bowl or keep it separated?😄 Each family member chose to have their meal a little different tonight. It wasn’t problem because it was easy to accommodate. We aren’t about making entirely separate meals for each person!😆 We were essentially all eating the same ingredients...red beans, rice, guacamole, cilantro, mushrooms, and a mixture with sautéed onions, bell peppers, garlic, zucchini, yellow squash + riced cauliflower. Heated up a tortilla for the burrito and added walnut “meat” we had in the refrigerator for the bowl! 💥 The bowl + plate are #glutenfree.😊

I made a traditional Mexican vegan version of Arroz con leche (rice pudding), 100% plant-based and gluten-free. September 16 was Independence Day in Mexico and I wanted to make something I grew up eating when I lived there. 🇲🇽🇲🇽🇲🇽 ———————————————- Here’s what you’ll need: • 2 cups of rice • 1 can of coconut milk • Almond milk as needed • cinnamon sticks • sweetener of choice: I used condensed coconut milk, but you can also use Stevia, regular sugar, maple syrup or anything else. • Pinch of salt • Raisins make it authentic (caution raisins are toxic for dogs!) ———————————————- Instructions: • Cook your rice how you usually make it but instead of water, it will be a mixture of water, half the coconut milk can and sweetener. • Add the cinnamon sticks while you cook it • Once rice is cooked and fluffy, add the rest of the coconut milk, more sweetener, and almond milk as needed to make it creamy. • Add raisins and extra cinnamon on top! When setting out to do something (working out, learning to cook, taking photos) DO IT FOR YOU. you can't compete with the endless amount of photos, comments or job promotions. Find pleasure in what you do for you. External motivators have a reward at the end of a task. We get so focused on that shiny goal that we can lose interest along the way or stop when we get it. Internal goals are just doing it for you and finding the joy and reward in the task itself. 😊😊 when you don't feel like you're competing with others, you compete only with yourself.
